Depending on the model of phone, there is a substantial amount of information that can be recovered from a cellular telephone.  Cell phones store data on a Subsciber Identity Module (SIM) card, a removable flash memory card such as a MicroSD card, or on the cell phone’s internal memory.  Most modern cell phones will have features such as a phone book with the owner’s personal contacts, call log data with the calls last dialed, calls last received, and missed calls.  It is possible to recover all these entries with their phone numbers, contact names, and time stamps.  Also, with the popularity of text messaging, it is possible to recover sent and received text messages.  If the cell phone contains a digital camera, it will be possible to recover any taken photos that were stored on the phone.  If a photo taken with the camera was deleted, it is still possible to recover most, if not all of the photo through forensic methods.  The probability of successfully recovering a deleted photo depends on how long ago the photo was deleted and how extensively the phone had been used since that time.
